Keto Cottage Cheese & Spinach Crustless Quiche

Ingredients (Serves 4–6)

Main Filling

  • 6 large eggs
  • 1 cup Cottage cheese
  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1 small onion (finely chopped)
  • 2–3 garlic cloves (minced)
  • 1 tablespoon olive oil or butter

Seasoning

  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon dried oregano or Italian seasoning
  • Optional: pinch of chili flakes or nutmeg

Instructions

1. Prepare the vegetables

Heat olive oil or butter in a pan over medium heat.

Add onion and cook for 3–4 minutes until soft.
Add garlic and cook for 30–60 seconds.

Add spinach and cook until wilted (or heated through if using frozen spinach).
Remove from heat and let it cool slightly.


2. Make the egg mixture

In a large bowl, whisk the eggs.

Add:

  • Cottage cheese
  • Shredded cheese
  • Salt, pepper, paprika, and herbs

Mix until well combined.


3. Combine everything

Stir the cooked spinach mixture into the egg mixture.
Mix until evenly distributed.


4. Bake

Preheat oven to 180°C (350°F).

Grease a baking dish or pie dish lightly with butter or oil.

Pour in the mixture and spread evenly.

Bake for 35–40 minutes, or until:

  • Center is set
  • Top is lightly golden
  • A knife inserted comes out clean

5. Rest and serve

Let the quiche rest for 10 minutes before slicing.
This helps it firm up and makes clean slices easier.
