Keto Creamy Tuscan Garlic Chicken

Ingredients
Main:
- 500 g (1 lb) chicken breasts (or thighs)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
Sauce:
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated parmesan cheese
- 1/2 cup cream cheese (optional, for extra thickness)
Add-ins:
- 1 cup spinach (fresh)
- 1/2 cup sun-dried tomatoes (chopped, preferably in oil)
Seasoning:
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
Instructions
1. Prepare the chicken
- Season chicken with salt, pepper, and paprika.
2. Sear the chicken
- Heat olive oil in a large pan over medium heat.
- Cook chicken for 5–7 minutes per side until golden and cooked through.
- Remove and set aside.
3. Cook the garlic
- In the same pan, add minced garlic.
- Cook for about 1 minute until fragrant (do not burn).
4. Make the creamy sauce
- Add chicken broth and heavy cream.
- Stir and bring to a gentle simmer.
- Add parmesan cheese and optional cream cheese.
- Mix until smooth and slightly thickened.
5. Add vegetables
- Stir in sun-dried tomatoes and spinach.
- Cook for 2–3 minutes until spinach wilts.
6. Combine
- Return the chicken to the pan.
- Spoon sauce over the chicken and let it simmer for 5 minutes.
7. Serve
- Serve hot with sauce poured over the chicken.
