Ingredients

Main:

  • 500 g (1 lb) chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)

Sauce:

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1/2 cup cream cheese (optional, for extra thickness)

Add-ins:

  • 1 cup spinach (fresh)
  • 1/2 cup sun-dried tomatoes (chopped, preferably in oil)

Seasoning:

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning

Instructions

1. Prepare the chicken

  • Season chicken with salt, pepper, and paprika.

2. Sear the chicken

  • Heat olive oil in a large pan over medium heat.
  • Cook chicken for 5–7 minutes per side until golden and cooked through.
  • Remove and set aside.

3. Cook the garlic

  • In the same pan, add minced garlic.
  • Cook for about 1 minute until fragrant (do not burn).

4. Make the creamy sauce

  • Add chicken broth and heavy cream.
  • Stir and bring to a gentle simmer.
  • Add parmesan cheese and optional cream cheese.
  • Mix until smooth and slightly thickened.

5. Add vegetables

  • Stir in sun-dried tomatoes and spinach.
  • Cook for 2–3 minutes until spinach wilts.

6. Combine

  • Return the chicken to the pan.
  • Spoon sauce over the chicken and let it simmer for 5 minutes.

7. Serve

  • Serve hot with sauce poured over the chicken.
