Keto Crack Chicken

Time

  • Prep: 10 minutes
  • Cook: 20–25 minutes (or longer for slow cooker option)

Ingredients

Main:

  • 500 g (1 lb) boneless, skinless chicken breasts (or thighs)
  • 200 g (7 oz) cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth

Flavor:

  • 1 tablespoon ranch seasoning (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Add-ins:

  • 6–8 slices cooked beef bacon (crumbled)
  • 2–3 green onions (chopped)

Instructions (Stovetop Method)

1. Cook the chicken

  • Heat a pan over medium heat.
  • Add chicken and cook for 6–8 minutes per side until fully cooked.
  • Remove and shred using two forks.

2. Make the creamy base

  • In the same pan, add chicken broth and cream cheese.
  • Stir continuously on low heat until smooth and creamy.

3. Add flavor

  • Mix in ranch seasoning, garlic powder, and black pepper.
  • Stir well to combine.

4. Combine everything

  • Add shredded chicken back into the pan.
  • Mix until the chicken is fully coated in the creamy sauce.

5. Add cheese and bacon

  • Stir in shredded cheddar cheese until melted.
  • Add crumbled beef bacon and mix well.

6. Finish and serve

  • Garnish with chopped green onions.
  • Serve hot.

Slow Cooker Method

  1. Add chicken, cream cheese, chicken broth, and seasonings to the slow cooker.
  2. Cook on low for 6–7 hours or high for 3–4 hours.
  3. Shred the chicken inside the cooker.
  4. Stir in cheddar cheese and cooked beef bacon before serving.

Serving Ideas (Keto-Friendly)

  • Serve over cauliflower rice
  • Wrap in lettuce leaves
  • Eat on its own as a creamy bowl

Tips

  • Chicken thighs give a juicier result than breasts.
