Ingredients
Main:
- 500 g (1 lb) ground beef
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese (softened)
Low-carb vegetables:
- 1 cup cauliflower (small florets)
- 1/2 cup celery (chopped)
Seasoning:
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon mustard powder
Optional toppings:
- Chopped pickles
- Cooked bacon bits
- Extra shredded cheese
- Chopped green onions
Instructions
1. Cook the beef
Heat a large pot over medium heat. Add the ground beef and cook until browned. Drain excess fat if needed and set the beef aside.
2. Sauté vegetables
In the same pot, add butter. Cook the onion and celery for 3 to 4 minutes until softened. Add the garlic and cook for another minute.
3. Add broth and cauliflower
Add the cauliflower and beef broth. Bring to a boil, then reduce heat and let it simmer for 10 to 12 minutes until the cauliflower is tender.
4. Make it creamy
Stir in the heavy cream and cream cheese. Mix until smooth and well combined.
5. Add beef and cheese
Return the cooked beef to the pot. Slowly add the shredded cheddar cheese while stirring to ensure it melts evenly.
6. Season
Add salt, pepper, paprika, and mustard powder. Taste and adjust seasoning if needed.
7. Serve
Serve hot with optional toppings like bacon, pickles, or extra cheese.
Tips
- Use sharp cheddar cheese for a stronger flavor.
- For a thicker soup, blend a portion of it and mix it back in.
- Keep heat low after adding cheese to prevent curdling.
