For Bang Bang sauce (keto version):
- ½ cup mayonnaise
- 2 tbsp sugar-free chili sauce (or hot sauce)
- 1 tbsp sriracha (adjust spice level)
- 1 tsp vinegar or lemon juice
- 1–2 tsp powdered erythritol (optional, for sweetness)
Instructions
Step 1: Prepare the filling
- Heat olive oil in a pan over medium heat.
- Add onions and cook until soft (2–3 minutes).
- Add garlic and cook for 30 seconds.
- Add ground beef and cook until browned.
- Stir in cabbage, paprika, salt, pepper, and chili flakes.
- Cook for 3–4 minutes until cabbage softens.
- Turn off heat and mix in:
- Cream cheese
- Cheddar cheese
- Let the mixture cool slightly.
Step 2: Make keto wrappers (if not using tortillas)
- Melt mozzarella in microwave (about 60–90 seconds).
- Mix in almond flour to form a dough.
- Place dough between parchment paper and roll thin.
- Cut into rectangular wrapper shapes.
Step 3: Assemble egg rolls
- Place 2–3 tbsp filling near one edge of wrapper.
- Fold sides inward, then roll tightly like an egg roll.
- Seal edges by pressing gently (cheese helps it stick).
Step 4: Fry or bake
Frying (crispiest):
- Heat oil to medium.
- Fry rolls for 2–3 minutes per side until golden brown.
Air fryer (healthier):
- 180°C for 8–10 minutes, flipping halfway.
Oven:
- Bake at 200°C for 12–15 minutes until crispy.
Step 5: Make Bang Bang sauce
- Mix mayonnaise, chili sauce, sriracha, vinegar, and sweetener.
- Taste and adjust spice/sweetness.
Step 6: Serve
- Drizzle sauce over egg rolls or serve as dip.
- Garnish with chopped green onions if desired.
Tips for best results
- Let filling cool before rolling to avoid tearing wrappers.
- Don’t overfill or rolls may burst.
- For extra crunch, double fry (quick second fry for 1 minute).
- You can swap beef with chicken or shrimp.
