Keto Crispy Bang Bang Burger Egg Rolls

Ingredients

For the filling:

  • 500g ground beef (80/20 for best flavor)
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • ½ small onion (finely chopped)
  • 1 cup shredded cabbage
  • ½ cup shredded cheddar cheese
  • 2 tbsp cream cheese
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt (adjust to taste)
  • ½ tsp chili flakes (optional)

For keto egg roll wrappers:

Option 1 (Cheese-based wrappers):

  • 1½ cups shredded mozzarella
  • 2 tbsp almond flour

Option 2 (Low-carb tortilla shortcut):

  • Keto tortillas (store-bought)

For Bang Bang sauce (keto version):

  • ½ cup mayonnaise
  • 2 tbsp sugar-free chili sauce (or hot sauce)
  • 1 tbsp sriracha (adjust spice level)
  • 1 tsp vinegar or lemon juice
  • 1–2 tsp powdered erythritol (optional, for sweetness)

Instructions

Step 1: Prepare the filling

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and cook until soft (2–3 minutes).
  3. Add garlic and cook for 30 seconds.
  4. Add ground beef and cook until browned.
  5. Stir in cabbage, paprika, salt, pepper, and chili flakes.
  6. Cook for 3–4 minutes until cabbage softens.
  7. Turn off heat and mix in:
    • Cream cheese
    • Cheddar cheese
  8. Let the mixture cool slightly.

Step 2: Make keto wrappers (if not using tortillas)

  1. Melt mozzarella in microwave (about 60–90 seconds).
  2. Mix in almond flour to form a dough.
  3. Place dough between parchment paper and roll thin.
  4. Cut into rectangular wrapper shapes.

Step 3: Assemble egg rolls

  1. Place 2–3 tbsp filling near one edge of wrapper.
  2. Fold sides inward, then roll tightly like an egg roll.
  3. Seal edges by pressing gently (cheese helps it stick).

Step 4: Fry or bake

Frying (crispiest):

  • Heat oil to medium.
  • Fry rolls for 2–3 minutes per side until golden brown.

Air fryer (healthier):

  • 180°C for 8–10 minutes, flipping halfway.

Oven:

  • Bake at 200°C for 12–15 minutes until crispy.

Step 5: Make Bang Bang sauce

  1. Mix mayonnaise, chili sauce, sriracha, vinegar, and sweetener.
  2. Taste and adjust spice/sweetness.

Step 6: Serve

  • Drizzle sauce over egg rolls or serve as dip.
  • Garnish with chopped green onions if desired.

Tips for best results

  • Let filling cool before rolling to avoid tearing wrappers.
  • Don’t overfill or rolls may burst.
  • For extra crunch, double fry (quick second fry for 1 minute).
  • You can swap beef with chicken or shrimp.
