Keto Pumpkin Mug Cake

🥣 Ingredients (1 serving)

  • 3 tbsp almond flour

  • 1 tbsp powdered erythritol or monk fruit sweetener

  • ¼ tsp baking powder

  • ¼ tsp pumpkin spice (or cinnamon)

  • Pinch of salt

  • 1 egg

  • 2 tbsp pumpkin purée (unsweetened)

  • 1 tbsp melted butter or coconut oil

  • ¼ tsp vanilla extract


🍳 Instructions

  1. Mix dry ingredients
    In a microwave-safe mug, mix almond flour, sweetener, baking powder, spice, and salt.

  2. Add wet ingredients
    Add egg, pumpkin purée, butter, and vanilla.
    Mix until smooth.

  3. Microwave
    Microwave on high for 60–90 seconds until set in the center.

  4. Cool slightly & enjoy
    Let rest 1 minute before eating.
