Ingredients
Noodles

8 oz lo mein noodles or spaghetti

Water for boiling
Veggies (mix & match)

1 cup mushrooms (sliced)

1 bell pepper (thinly sliced)

1 cup shredded cabbage or bok choy

1 carrot (julienned)

3 green onions (sliced)
Sauce
-
¼ cup soy sauce or tamari
-
1½ tbsp maple syrup or brown sugar
-
1 tbsp sesame oil
-
2 tbsp water or vegetable broth
-
1 tsp cornstarch (optional, for thickness)
Optional Protein

Tofu, edamame, or vegan chicken strips
Instructions

Cook noodles according to package directions. Drain and set aside.

Mix sauce ingredients in a small bowl.

Stir-fry veggies in a large pan or wok with a little oil over medium-high heat (3–5 min).

Add protein if using and cook until heated through.

Add noodles + sauce to the pan. Toss well and cook 1–2 minutes until glossy and coated.

Taste and adjust seasoning.

Tips
-
For authentic chew, slightly undercook noodles before stir-frying.
