Ingredients

Noodles

  • 8 oz lo mein noodles or spaghetti

  • Water for boiling

Veggies (mix & match)

  • 1 cup mushrooms (sliced)

  • 1 bell pepper (thinly sliced)

  • 1 cup shredded cabbage or bok choy

  • 1 carrot (julienned)

  • 3 green onions (sliced)

Sauce

  • ¼ cup soy sauce or tamari

  • 1½ tbsp maple syrup or brown sugar

  • 1 tbsp sesame oil

  • 2 tbsp water or vegetable broth

  • 1 tsp cornstarch (optional, for thickness)

Optional Protein

  • Tofu, edamame, or vegan chicken strips


Instructions

  1. Cook noodles according to package directions. Drain and set aside.

  2. Mix sauce ingredients in a small bowl.

  3. Stir-fry veggies in a large pan or wok with a little oil over medium-high heat (3–5 min).

  4. Add protein if using and cook until heated through.

  5. Add noodles + sauce to the pan. Toss well and cook 1–2 minutes until glossy and coated.

  6. Taste and adjust seasoning.


Optional Add-Ins

  • Minced garlic or ginger

  • Chili garlic sauce or sriracha

  • Sesame seeds on top


Tips

  • For authentic chew, slightly undercook noodles before stir-frying.

  • Swap soy sauce for coconut aminos for a lower-sodium option.
