Vegan Tater Tot Casserole
🌱 Ingredients (serves 4–6)

1 bag (900 g / 32 oz) vegan tater tots

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

2 cups mushrooms, chopped

1 cup frozen peas or mixed vegetables
-
1½ cups plant-based ground (soy, lentil, or mushroom-based)

Salt & black pepper, to taste
Creamy Sauce

1½ cups unsweetened plant milk
-
2 tbsp flour (or cornstarch)
-
2 tbsp nutritional yeast
-
1 tbsp soy sauce or tamari
-
½ tsp garlic powder
-
½ tsp onion powder
🍳 Instructions

Preheat oven
Preheat to 200°C / 400°F. -
Cook the filling
Heat olive oil in a pan. Sauté onion until soft, add garlic.
Stir in mushrooms and cook until browned.
Add plant-based ground, veggies, salt, and pepper. Cook 5 minutes. -
Make the sauce
In a saucepan, whisk plant milk, flour, nutritional yeast, soy sauce, garlic powder, and onion powder.
Cook on medium heat, whisking, until thickened. -
Assemble
Spread filling in a greased baking dish.
Pour sauce evenly over it.
Arrange tater tots in a single layer on top. -
Bake
Bake uncovered for 35–40 minutes until tots are golden and crispy. -
Rest & serve
Let cool 5 minutes before serving.
