WW Dorito Taco Salad – Detailed Recipe

This is a lighter Weight Watchers–style taco salad that combines seasoned meat, fresh vegetables, and crushed Doritos with a lighter dressing. It keeps the flavor of the classic taco salad while reducing fat and calories.


Ingredients

Meat Mixture

  • 450 g lean ground beef (90–95% lean) or ground turkey

  • 1 packet taco seasoning (or homemade taco seasoning)

  • 1/3 cup water

Salad Base

  • 6 cups romaine lettuce or iceberg lettuce, chopped

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1/2 cup red onion, finely chopped

  • 1 cup canned black beans or kidney beans, drained and rinsed

  • 1/2 cup corn kernels (optional)

Cheese

  • 1/2 cup reduced-fat shredded cheddar cheese

Crunch

  • 1 1/2 cups crushed Doritos (Nacho Cheese flavor)

Dressing

  • 1/2 cup fat-free Greek yogurt

  • 1/4 cup salsa

  • 1 tablespoon lime juice

  • 1/2 teaspoon garlic powder

  • Salt and black pepper to taste


Instructions

1. Cook the Meat

  1. Heat a large skillet over medium heat.

  2. Add the lean ground beef or turkey and cook until browned, breaking it apart as it cooks.

  3. Drain excess fat if necessary.

  4. Add taco seasoning and 1/3 cup water.

  5. Stir well and simmer for 3–5 minutes until the mixture thickens.

  6. Remove from heat and allow it to cool slightly.


2. Prepare the Dressing

In a small bowl combine:

  • Greek yogurt

  • Salsa

  • Lime juice

  • Garlic powder

  • Salt and black pepper

Mix until smooth and refrigerate until ready to use.


3. Prepare the Salad

In a large salad bowl combine:

  • Chopped lettuce

  • Cherry tomatoes

  • Cucumber

  • Red onion

  • Beans

  • Corn (if using)

Mix lightly to distribute the vegetables evenly.


4. Assemble the Salad

  1. Add the cooked taco meat on top of the salad mixture.

  2. Sprinkle the reduced-fat cheddar cheese.

  3. Add the crushed Doritos just before serving to keep them crunchy.

  4. Drizzle the yogurt-salsa dressing over the salad.


Serving

Toss everything together just before eating so the dressing coats all ingredients evenly.


Tips for Lower Weight Watchers Points

  • Use extra-lean ground turkey instead of beef.

  • Reduce Doritos to 1 cup for fewer points.

  • Increase lettuce and vegetables to add volume without increasing calories.
