Ingredients

1 cup fat-free cottage cheese

2 large eggs

¼ teaspoon garlic powder (optional)

¼ teaspoon Italian seasoning or dried herbs (optional)

Pinch of salt and black pepper

Nonstick cooking spray

Fresh vegetables (spinach, mushrooms, peppers)

Instructions
1. Preheat Oven
Preheat oven to 350°F.
Line a baking sheet with parchment paper and lightly spray with nonstick spray.
2. Blend the Batter
Add cottage cheese, eggs, and seasonings to a blender.
Blend until completely smooth (about 30–45 seconds). The mixture should look like a thin batter.
3. Shape the Flatbreads
Pour batter onto prepared baking sheet.
Spread into two thin circles (about 6–7 inches each). Keep them evenly thin for best texture.
4. Bake
Bake for 25–30 minutes, or until edges are golden and centers are set.
The flatbread should look lightly browned and no longer wet in the middle.
5. Cool Slightly
Allow to cool for 5–10 minutes before removing from parchment. This helps it firm up.
To Make It a Pizza

Increase oven temperature to 400°F.

Add sauce, light cheese, and toppings.

Bake an additional 5–8 minutes until cheese melts.
Texture Notes

Slightly thicker = softer, more wrap-like

Storage
