WW Mexican White Trash Casserole
Ingredients (6 servings)
- 1 lb lean ground turkey or 96% lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (low sodium if possible)
- 1 can diced tomatoes with green chilies (10 oz)
- 1 can corn, drained
- 1 can black beans, rinsed and drained
- 1 cup fat-free Greek yogurt
- 1 can reduced-fat cream of chicken soup
- 1 cup reduced-fat shredded Mexican cheese blend
- 1 small bag baked tortilla chips or baked corn chips (about 4 oz), lightly crushed
- Cooking spray
Optional toppings:
- Green onions
- Cilantro
- Jalapeños
- Salsa
- Extra Greek yogurt instead of sour cream
Instructions
1. Prep the oven
Preheat oven to 350°F (175°C).
Lightly spray a 9×13-inch casserole dish with cooking spray.
2. Cook the meat
In a large skillet over medium heat:
- Cook onion for 3–4 minutes until softened.
- Add garlic and cook 30 seconds.
- Add ground turkey/beef and cook until browned.
- Drain excess fat if needed.
3. Add flavor
Stir in:
- Taco seasoning
- Diced tomatoes with chilies
- Corn
- Black beans
Simmer 3–5 minutes.
4. Make the creamy mixture
In a bowl, combine:
- Greek yogurt
- Reduced-fat cream soup
Mix until smooth.
5. Assemble
Layer in casserole dish:
- Half the crushed tortilla chips
- Meat mixture
- Creamy mixture spread evenly
- Cheese
- Remaining chips on top
6. Bake
Bake uncovered for 25–30 minutes until bubbly and lightly golden.
Let rest 5 minutes before serving.
