🍮 Keto Caramel-Bottom French Toast Bake

Caramel Bottom

½ cup keto brown sugar sweetener (erythritol/allulose blend works best)

4 tbsp butter

¼ cup heavy cream

1 tsp vanilla extract
French Toast

6–8 slices keto bread, cubed

4 large eggs
-
¾ cup heavy cream
-
1 tsp vanilla extract

1 tsp cinnamon
-
Pinch of salt
Optional Toppings

Chopped pecans or walnuts

Sugar-free whipped cream

Extra keto caramel drizzle
Instructions

Make the caramel
In a saucepan over low heat, melt butter.
Add sweetener and cream, stirring until smooth and glossy.
Remove from heat, stir in vanilla. -
Prepare the bake
Pour caramel evenly into a greased baking dish.
Sprinkle nuts over caramel if using. -
Add bread
Layer keto bread cubes evenly over the caramel. -
Custard mix
Whisk eggs, cream, vanilla, cinnamon, and salt.
Pour over bread, pressing gently so it absorbs. -
Bake
Preheat oven to 180°C (350°F).
Bake uncovered 30–35 minutes until set and golden. -
Serve
Let rest 10 minutes, then invert onto a plate so the caramel is on top 😍
