☕🍰 Delicious Vegan Tiramisu
🧺 Ingredients
Cream layer:

1½ cups raw cashews (soaked 4 hours)

¾ cup thick coconut cream (chilled)

⅓ cup maple syrup or powdered sugar

2 tbsp lemon juice
-
1 tsp vanilla extract
-
2 tbsp nutritional yeast (optional, adds depth)
Coffee soak:

1½ cups strong brewed coffee or espresso (cooled)

1–2 tbsp coffee liqueur or vanilla extract (optional)
Layers:

Vegan ladyfingers or plain vegan sponge cake

Unsweetened cocoa powder (for dusting)
👩🍳 Instructions

Blend the cream
Blend cashews, coconut cream, sweetener, lemon juice, vanilla, and nutritional yeast until ultra-smooth and fluffy. -
Prepare coffee
Mix cooled coffee with liqueur or vanilla. -
Assemble layers
Quickly dip cake pieces into coffee (don’t soak too long).
Layer cake → cream → cake → cream in a dish or cups. -
Chill
Refrigerate at least 4 hours (overnight = best texture). -
Finish
Dust generously with cocoa powder before serving.
