🧺 Ingredients

Cream layer:

  • 1Β½ cups raw cashews (soaked 4 hours)

  • 1 tsp vanilla extract

  • 2 tbsp nutritional yeast (optional, adds depth)

Coffee soak:

  • 1Β½ cups strong brewed coffee or espresso (cooled)

  • 1–2 tbsp coffee liqueur or vanilla extract (optional)

Layers:

  • Vegan ladyfingers or plain vegan sponge cake

  • Unsweetened cocoa powder (for dusting)

  1. Blend the cream
    Blend cashews, coconut cream, sweetener, lemon juice, vanilla, and nutritional yeast until ultra-smooth and fluffy.

  2. Prepare coffee
    Mix cooled coffee with liqueur or vanilla.

  3. Assemble layers
    Quickly dip cake pieces into coffee (don’t soak too long).
    Layer cake β†’ cream β†’ cake β†’ cream in a dish or cups.

  4. Chill
    Refrigerate at least 4 hours (overnight = best texture).

  5. Finish
    Dust generously with cocoa powder before serving.
