🥐 Vegan Biscuits (Soft & Flaky)
🧺 Ingredients

2 cups all-purpose flour

1 tbsp baking powder

½ tsp salt

1 tbsp sugar (optional)

½ cup cold vegan butter or solid coconut oil

¾ cup cold plant milk (soy or almond)

1 tsp apple cider vinegar or lemon juice
👩🍳 Instructions

Prep milk
Mix plant milk with vinegar. Set aside 5 minutes (vegan “buttermilk”). -
Dry mix
Whisk flour, baking powder, salt, and sugar. -
Cut in fat
Rub cold vegan butter into flour until crumbly (pea-sized bits = flaky layers). -
Form dough
Add milk mixture. Stir just until dough comes together—don’t overmix. -
Shape & cut
Pat dough to 1-inch thickness. Fold once or twice for layers. Cut rounds. -
Bake
Place on lined tray. Bake at 220°C (425°F) for 12–15 minutes until golden. -
Serve warm
Brush tops with vegan butter if you’re feeling fancy 😄
