🍤🧄 Creamy Low-Carb Tuscan Shrimp (Keto)

🧺 Ingredients

  • 450 g (1 lb) raw shrimp, peeled & deveined

  • Salt & black pepper

  • 1 tbsp olive oil + 1 tbsp butter

  • 3 cloves garlic, minced

  • ½ tsp red chili flakes (optional)

  • ½ cup sun-dried tomatoes (oil-packed, drained & sliced)

  • 1 cup heavy cream

  • ½ cup chicken or seafood broth

  • ½ cup grated parmesan

  • 1 cup fresh spinach

  • ½ tsp Italian seasoning


👩‍🍳 Instructions

  1. Season shrimp
    Pat shrimp dry. Season with salt and pepper.

  2. Sear shrimp
    Heat oil and butter in a skillet over medium-high heat.
    Cook shrimp 1–2 minutes per side until just pink.
    Remove and set aside.

  3. Build the sauce
    In the same pan, add garlic and chili flakes. Sauté 30 seconds.
    Add sun-dried tomatoes and Italian seasoning.

  4. Cream it up
    Pour in cream and broth. Simmer 3–4 minutes until slightly thick.

  5. Cheese + greens
    Stir in parmesan until melted.
    Add spinach and let it wilt.

  6. Finish
    Return shrimp to pan. Simmer 1–2 minutes.
    Taste and adjust salt/pepper.

  • Zucchini noodles

  • Cauliflower rice

  • Steamed broccoli or asparagus

  • Eat straight from the pan (valid 😄)
