1 tbsp melted butter (or coconut oil)

¼ cup unsweetened almond milk

Pinch of salt

Optional (sweet version): 1–2 tbsp keto sweetener + ½ tsp vanilla
Instructions

Blend eggs, cream cheese, almond flour, butter, almond milk, and salt until smooth.

Rest batter 5 minutes (helps flexibility).

Heat a non-stick pan over medium-low and lightly grease.

Pour a thin layer of batter, swirl to coat.

Cook 30–45 seconds per side until just set (don’t overcook).

Stack crepes on a plate with parchment between.
