Keto Crepe Rolls

🥞 Keto Crepe Rolls (Thin & Flexible)

Ingredients

  • 3 large eggs

  • 2 oz cream cheese (softened)

  • ¼ cup almond flour

  • 1 tbsp melted butter (or coconut oil)

  • ¼ cup unsweetened almond milk

  • Pinch of salt

  • Optional (sweet version): 1–2 tbsp keto sweetener + ½ tsp vanilla


Instructions

  1. Blend eggs, cream cheese, almond flour, butter, almond milk, and salt until smooth.

  2. Rest batter 5 minutes (helps flexibility).

  3. Heat a non-stick pan over medium-low and lightly grease.

  4. Pour a thin layer of batter, swirl to coat.

  5. Cook 30–45 seconds per side until just set (don’t overcook).

  6. Stack crepes on a plate with parchment between.


To Make Rolls

  1. Spread filling of choice.

  2. Roll tightly like a log.

  3. Slice or serve whole.

  • Sugar-free chocolate spread

  • Peanut butter + keto jam

  • Chicken + mayo + lettuce

  • Smoked salmon + cream cheese
