Keto Brioche Bread

🧈 Keto Brioche Bread (Soft & Buttery)

Ingredients

  • 1½ cups almond flour (fine, blanched)

  • 2 tbsp coconut flour

  • â…“ cup powdered keto sweetener (allulose preferred)

  • 2 tsp baking powder

  • ¼ tsp salt

  • 4 large eggs (room temperature)

  • â…“ cup butter, melted (cooled)

  • ¼ cup heavy cream (or unsweetened almond milk)

  • 1 tsp vanilla extract

  • Optional: ½ tsp xanthan gum (extra softness)


Instructions

  1. Preheat oven to 170°C (325°F). Line a loaf pan with parchment.

  2. In a bowl, whisk almond flour, coconut flour, sweetener, baking powder, salt, and xanthan gum.

  3. In another bowl, beat eggs, melted butter, cream, and vanilla.

  4. Combine wet and dry ingredients until smooth and thick.

  5. Pour batter into loaf pan and smooth the top.

  6. Bake 45–55 minutes, tenting with foil if browning too fast.

  7. Cool completely before slicing (very important!).


Texture Tips

  • For lighter crumb, separate eggs and fold in whipped egg whites.

  • Allulose gives the most real brioche softness.

  • Slice thin—keto breads are richer.
