🍗🥬🍄 Keto Chicken, Spinach & Mushroom Oven Dish (Low-Carb)
Ingredients

500 g (about 1 lb) chicken breast or thighs

2 tbsp olive oil or butter

200 g mushrooms, sliced

2 cups fresh spinach

3 cloves garlic, minced

¾ cup heavy cream
-
½ cup grated mozzarella or cheddar

¼ cup grated Parmesan
-
½ tsp paprika
-
½ tsp black pepper
-
Salt to taste

Optional: ¼ tsp nutmeg or Italian seasoning
Instructions

Preheat oven to 180°C (350°F). Grease a baking dish.

Season chicken with salt, pepper, and paprika. Place in dish.

Heat oil in a pan. Sauté mushrooms until golden. Add garlic, cook briefly.

Stir in spinach until just wilted. Remove from heat.

Mix cream with half the cheese and optional seasoning.

Spoon mushroom–spinach mixture over chicken. Pour cream mixture evenly on top.

Sprinkle remaining cheese.

Bake 30–35 minutes, until chicken is cooked through and bubbly.

Broil 2–3 minutes if you want a golden top.
