Air Fryer Fried Liver with Onions
Tender, flavorful liver cooked in the air fryer with sweet caramelized onions creates a rich and comforting dish with less oil and less mess than traditional frying. The liver stays juicy inside while developing a beautifully browned exterior, and the onions become soft, sweet, and savory.
This classic comfort food pairs perfectly with mashed potatoes, rice, or warm bread.
Ingredients
For the Liver
- 500 g (1 lb) beef liver or chicken liver
- 2 tablespoons milk (optional, for soaking)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Salt and black pepper, to taste
- 2 tablespoons flour (optional, for light coating)
For the Onions
- 2 large onions, sliced
- 1 tablespoon olive oil
- Pinch of salt
- ½ teaspoon sugar (optional, helps caramelize)
Why Soak the Liver?
Soaking liver in milk for 20–30 minutes helps:
- reduce bitterness
- soften the texture
- create milder flavor
This step is optional but highly recommended for tender, flavorful liver.
Instructions
1. Prepare the Liver
Rinse the liver and pat dry with paper towels.
Trim away any visible membranes if needed.
Optional: soak in milk for 20–30 minutes, then drain and pat dry.
Slice into even pieces.
2. Season the Liver
Place the liver in a bowl.
Add:
- olive oil
- garlic powder
- paprika
- thyme
- salt
- black pepper
Toss gently to coat.
For a light crispy exterior, sprinkle with flour and toss lightly.
3. Prepare the Onions
In another bowl, toss the sliced onions with:
- olive oil
- salt
- sugar (optional)
The onions will soften and caramelize as they cook.
4. Preheat the Air Fryer
Preheat the air fryer to 190°C / 375°F for 3–5 minutes.
5. Air Fry the Onions
Place onions in the air fryer basket.
Cook at 190°C / 375°F for 8 minutes, shaking halfway through.
The onions should become soft and lightly golden.
Remove and set aside.
6. Air Fry the Liver
Arrange the liver pieces in a single layer.
Cook at 190°C / 375°F for 7–10 minutes, flipping halfway through.
Cooking time depends on thickness.
The liver should be:
- browned outside
- tender inside
- slightly pink in the center for best texture
Avoid overcooking, as liver can become dry and tough.
7. Combine & Serve
Return the onions to the basket with the cooked liver for 1 minute to warm together.
Serve immediately.
