Keto Tiramisu Cake

🍰 Keto Sponge Cake

Ingredients

  • 1½ cups almond flour

  • ¼ cup powdered erythritol

  • 1 tsp baking powder

  • Pinch of salt

  • 3 large eggs

  • ¼ cup melted butter or coconut oil

  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 175°C / 350°F.

  2. Mix dry ingredients in a bowl.

  3. Whisk eggs, butter, and vanilla; combine with dry mix.

  4. Pour into a lined 8-inch pan.

  5. Bake 15–18 minutes. Cool completely.


☕ Coffee Soak

  • ½ cup strong brewed coffee (cooled)

  • 1 tbsp powdered erythritol

Mix and set aside.


🧀 Mascarpone Cream

Ingredients

  • 1 cup mascarpone cheese (or cream cheese)

  • 1 cup heavy whipping cream

  • ½ cup powdered erythritol

  • 1 tsp vanilla extract

Instructions

  1. Whip cream to stiff peaks.

  2. Beat mascarpone, sweetener, and vanilla until smooth.

  3. Gently fold whipped cream into mascarpone.


🍰 Assemble

  1. Slice cake horizontally into 2 layers.

  2. Brush bottom layer with coffee soak.

  3. Spread half the mascarpone cream.

  4. Add second layer, brush with coffee.

  5. Top with remaining cream.


🍫 Finish

  • Dust with unsweetened cocoa powder

  • Chill 2–4 hours before serving
