Keto Loaded Zucchini Bake

🧾 Ingredients (4–6 servings)

  • 4 medium zucchini, sliced into rounds or half-moons

  • 1 cup shredded cheddar cheese

  • ½ cup mozzarella cheese

  • ½ cup cream cheese, softened

  • ½ cup sour cream

  • 4 slices bacon, cooked & crumbled

  • 2 tbsp butter

  • 2 cloves garlic, minced

  • Salt & black pepper to taste

  • ½ tsp paprika

  • Optional toppings: green onions, jalapeños


👩‍🍳 Instructions

  1. Preheat oven to 190°C / 375°F.

  2. Lightly salt zucchini slices and let sit 10 minutes, then pat dry.

  3. In a pan, melt butter and sauté garlic briefly.

  4. Stir in cream cheese and sour cream until smooth.

  5. Season with salt, pepper, and paprika.

  6. In a bowl, combine zucchini, cheese sauce, half the bacon, and half the shredded cheese.

  7. Transfer to a greased baking dish.

  8. Top with remaining cheese and bacon.

  9. Bake 25–30 minutes until bubbly and golden.

  10. Rest 5 minutes, then garnish and serve.
