🥥 Vegan Coconut Soup (Easy & Creamy)

Ingredients

  • 1 tbsp coconut oil (or olive oil)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated (or 1 tsp ground)

  • 1 tbsp curry paste or curry powder

  • 1 can (400 ml) full-fat coconut milk

  • 3 cups vegetable broth

  • 1 cup mixed veggies
    (mushrooms, carrots, bell peppers, broccoli, or zucchini)

  • 1 tbsp soy sauce or tamari

  • 1 tbsp lime or lemon juice

  • Salt & black pepper to taste

  • Fresh cilantro (optional)


Instructions

  1. Heat oil in a pot over medium heat. Sauté onion until soft.

  2. Add garlic and ginger, cook 30 seconds until fragrant.

  3. Stir in curry paste/powder.

  4. Pour in coconut milk + vegetable broth and bring to a gentle simmer.

  5. Add vegetables and cook 8–10 minutes until tender.

  6. Stir in soy sauce and lime juice. Adjust salt and pepper.

  7. Serve hot, topped with cilantro 🌿
