🥥 Vegan Coconut Soup (Easy & Creamy)
Ingredients

1 tbsp coconut oil (or olive oil)

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp fresh ginger, grated (or 1 tsp ground)

1 tbsp curry paste or curry powder

1 can (400 ml) full-fat coconut milk

3 cups vegetable broth
-
1 cup mixed veggies
(mushrooms, carrots, bell peppers, broccoli, or zucchini) -
1 tbsp soy sauce or tamari

1 tbsp lime or lemon juice

Salt & black pepper to taste

Fresh cilantro (optional)
Instructions

Heat oil in a pot over medium heat. Sauté onion until soft.

Add garlic and ginger, cook 30 seconds until fragrant.

Stir in curry paste/powder.

Pour in coconut milk + vegetable broth and bring to a gentle simmer.

Add vegetables and cook 8–10 minutes until tender.

Stir in soy sauce and lime juice. Adjust salt and pepper.
