Vegan Granola Cups

Ingredients
Dry Ingredients

2 cups rolled oats

½ cup chopped nuts (almonds, walnuts, or pecans)

¼ cup seeds (sunflower, pumpkin, or chia seeds)

½ tsp cinnamon

¼ tsp salt
Wet Ingredients

⅓ cup maple syrup or agave syrup
-
¼ cup coconut oil (melted)
-
1 tsp vanilla extract
-
2 tbsp peanut butter or almond butter
Optional add-ins:

¼ cup shredded coconut
-
¼ cup raisins or dried cranberries
-
2 tbsp chocolate chips (vegan)

Oven
Step 1: Preheat Oven
Preheat oven to 180°C (350°F).
Lightly grease a muffin tin with oil or line with silicone muffin liners.
Step 2: Mix Dry Ingredients
In a large bowl combine:

chopped nuts
-
seeds
-
cinnamon
-
salt
-
shredded coconut (optional)
Mix well.
Step 3: Mix Wet Ingredients
In another bowl combine:

maple syrup
-
melted coconut oil
-
vanilla extract
-
peanut butter
Whisk until smooth.
Step 4: Combine Mixtures
Pour the wet mixture into the dry ingredients.
Stir thoroughly until everything is well coated and slightly sticky.
This stickiness helps the cups hold their shape.
Step 5: Shape the Cups

Scoop 2–3 tablespoons of mixture into each muffin cup.

Press firmly with the back of a spoon or your fingers.

Press the mixture up the sides to create a cup shape.
Make sure the bottom and sides are well packed so they hold together.
Step 6: Bake
Bake for 15–18 minutes until:

edges are golden brown

oats smell toasted
Do not overbake or they may become too hard.
Step 7: Cool Completely
Let the granola cups cool in the muffin tin for 20–30 minutes.
They will firm up as they cool.
Carefully remove them from the pan.
Step 8: Fill the Cups
Fill with any of the following:
