Vegan Granola Cups

About 10–12 granola cups


Ingredients

Dry Ingredients

  • 2 cups rolled oats

  • ½ cup chopped nuts (almonds, walnuts, or pecans)

  • ¼ cup seeds (sunflower, pumpkin, or chia seeds)

  • ½ tsp cinnamon

  • ¼ tsp salt

Wet Ingredients

  • ⅓ cup maple syrup or agave syrup

  • ¼ cup coconut oil (melted)

  • 1 tsp vanilla extract

  • 2 tbsp peanut butter or almond butter

Optional add-ins:

  • ¼ cup shredded coconut

  • ¼ cup raisins or dried cranberries

  • 2 tbsp chocolate chips (vegan)


Equipment

  • Muffin tin (12-cup)

  • Mixing bowl

  • Spoon

  • Oven


Step 1: Preheat Oven

Preheat oven to 180°C (350°F).

Lightly grease a muffin tin with oil or line with silicone muffin liners.


Step 2: Mix Dry Ingredients

In a large bowl combine:

  • rolled oats

  • chopped nuts

  • seeds

  • cinnamon

  • salt

  • shredded coconut (optional)

Mix well.


Step 3: Mix Wet Ingredients

In another bowl combine:

  • maple syrup

  • melted coconut oil

  • vanilla extract

  • peanut butter

Whisk until smooth.


Step 4: Combine Mixtures

Pour the wet mixture into the dry ingredients.

Stir thoroughly until everything is well coated and slightly sticky.

This stickiness helps the cups hold their shape.


Step 5: Shape the Cups

  1. Scoop 2–3 tablespoons of mixture into each muffin cup.

  2. Press firmly with the back of a spoon or your fingers.

  3. Press the mixture up the sides to create a cup shape.

Make sure the bottom and sides are well packed so they hold together.


Step 6: Bake

Bake for 15–18 minutes until:

  • edges are golden brown

  • oats smell toasted

Do not overbake or they may become too hard.


Step 7: Cool Completely

Let the granola cups cool in the muffin tin for 20–30 minutes.

They will firm up as they cool.

Carefully remove them from the pan.


Step 8: Fill the Cups

Fill with any of the following:

Breakfast

  • Vegan yogurt

  • Fresh strawberries

  • Blueberries

  • Banana slices

Dessert

  • Coconut cream

  • Chocolate mousse

  • Peanut butter and banana

Snack

  • Almond butter

  • Fruit and chia jam


Storage

Room temperature:

  • Store in airtight container 3–4 days

Refrigerator:

  • Up to 1 week

Freezer:

  • Up to 1 month

Reheat lightly in oven for crispness.


Flavor Variations

Chocolate Granola Cups

Add:

  • 2 tbsp cocoa powder

  • ¼ cup vegan chocolate chips

Tropical Granola Cups

Add:

  • dried mango

  • coconut flakes

  • macadamia nuts

Apple Cinnamon Cups

Add:

  • dried apples

  • extra cinnamon

  • chopped walnuts
